In order to bake “aluminum free” it is recommended that you make your own homemade baking powder with cream of tartar as the powdered acid according to the following recipe. The manufactures whose products were tested and found to have an undetectable amount (less than 0.004mg/tsp.) of aluminum are in parentesis595:

·         2 Tbsp.            Cream of Tartar (McCormick and Signature Kitchens)

·         1 Tbsp.            Baking Soda (Arm & Hammer and Davis)

·         1 Tbsp.            Corn Starch (Davis)

Mix the ingredients together and put the mixture through a screen wire sieve. For storage, place the homemade baking powder in a container with a snap on plastic lid or vacuum seal, such as plastic Minivac spice containers made by Tightvac.com. Store the homemade baking powder in a cool dry place. Using the same amount of aluminum-free homemade baking powder in recipes has been tested and is the same as using commercial baking powder containing aluminum.

Aluminum used in baking powder has resulted in processed food being “aluminized” increasing the population’s daily exposure to aluminum at levels much higher than found in drinking water. For example, one pancake for breakfast and a piece of cake for dessert can contain 15mg of aluminum. Likewise, one ounce of American cheese and one baking powdered biscuit can contain 20mg of aluminum612. Therefore, it is not surprising that the risk of Alzheimer’s disease (AD) in the U.S. is increased 7.6-fold with a daily diet of pancakes, waffles, muffins, biscuits, cornbread, and/or tortillas613. One reason why the rate of AD is increasing exponentially in the U.S. is most store and restaurant-bought baked goods in the U.S. are being made by aluminum containing baking powder.
